No Bake, No Added Sugar Dubai Chocolate Brownie Ice Cream Bites

Inspired by the luxe Dubai chocolate sensation, these Dubai Chocolate Brownie Ice Cream Bites will be a treat on repeat all year long.
No-bake, no added sugar, and loaded with protein. Imagine a rich pistachio brownie crust, creamy pistachio cottage cheese “ice cream,” and a silky tahini-chocolate drizzle—all frozen into the dreamiest bite you’ll want on repeat. This is indulgence reimagined, the better-for-you way.
INGREDIENTS:
pistachio brownie crust
- 1/4 cup raw pistachios
- 2 Dark Chocolate Brownie Superfood Bars
- 1 - 2 Tbsp tahini, softened in the microwave for 15-30 seconds
- 1 Tbsp water
pistachio protein ice-cream
- 1 cup cottage cheese
- 1/2 cup plain Greek yogurt
- 1/2 tsp pure vanilla extract
- pinch of salt
- 1 Tbsp pistachio butter
- 1/2-1 Tbsp Matcha Coconut Blend Superfood Latte (from Blume) or spirulina for extra green color
toppings
- 3-4 Tbsp Dark Chocolate Chips (we love the no refined sugar date-sweetened chocolate chips from Just Date)
- 1 Tbsp tahini
- raw pistachios
INSTRUCTIONS:
pistachio brownie crust
- in a food processor, add pistachios & dark chocolate brownie bar; blitz into powder.
- transfer to a bowl, then add tahini + a little water to crust & mix well.
- add 1 small cookie scoop of crust mixture to the bottom of a mini silicon muffin tin.
- freeze until ice-cream is ready.
pistachio protein ice-cream
- to a food processor, combine cottage cheese, greek yogurt, pistachio butter, salt, & vanilla extract.
- once pureed, add protein powder & spirulina or matcha; blend again.
- add 1 medium sized cookie scoop of ice-cream mixture on top of each bite; freeze for 30 minutes before adding toppings.
toppings
- in a bowl, add dark chocolate & tahini.
- microwave in 30 second intervals until melted.
- spread ganache onto each bite, then sprinkle with pistachios (do each bite one by one because the chocolate will harden fast!)
- store bites in the freezer.
