🛒 INGREDIENTS
Crust / Shortbread Base

1 oz maple-keto granola (or granola of choice)

2 oz organic sprouted pecans (Erica uses Lark Ellen Farm)

2 Tbsp golden monk-fruit sweetener with allulose (Erica uses Lakanto)

½ tsp sea salt
-
2 Tbsp nut butter softened (Erica uses Mixed Up Foods The New Favorite Nut Butter)

2–4 Tbsp water (as needed)
Protein-Salted-Caramel Layer

½ cup Medjool dates (pitted and soaked in hot water ~10 min)
-
¼ cup golden monk-fruit sweetener
-
1 Tbsp almond butter (or nut butter of choice)

1 tsp pure vanilla extract
-
½ tsp sea salt
-
½ cup cottage cheese (for creaminess)

Pecans: 1 half per bite (for topping)
👩🍳DIRECTIONS
1. Make the Crust / Shortbread Base

Preheat oven to 350 °F (175 °C).

In a food processor, combine granola, B.T.R. bar, pecans, monk-fruit sweetener, and salt; pulse into fine crumbs.

Add nut butter and mix; gradually add water as needed until dough holds together.

Using a small cookie scoop, portion dough into each cavity of a mini muffin tin (~24-cup). Bake ~8-10 minutes. Let cool completely.
2. Make the Protein-Salted-Caramel Layer

In the food processor, combine dates, monk-fruit sweetener, almond butter, vanilla, and salt. Add a splash of water if needed for smooth caramel consistency.

Add cottage cheese and process until creamy.
3. Assemble the Bites

Spoon a dollop of the caramel mixture into each cooled crust.

Top each with one pecan half and a pinch of flaky sea salt.

Refrigerate or freeze until set. Store chilled.
