🧪 Wickedly Clean - Matcha Mint Cookies & Cream High Protein Low Sugar Cauldrons
Not every Halloween indulgence has to come with a sugar crash! This year, treat yourself to something spooky-sweet that magically doesn't have any added sugar or junk ingredients. These Matcha Mint Cookies & Cream Protein Cauldrons are high-protein, low-sugar, gluten-free, and totally no-bake — proving you can have your treat and feel amazing, too. With a minty-matcha creamy center, fudgy crust and crunchy topping they’re a wickedly clean way to indulge without the tricks.

🍃 INGREDIENTS
Cauldron Shell / Crust

Catalina Crunch chocolate-mint sandwich cookies (outsides only)

½ tsp Chocolate Salt Electrolyte Mix (Erica uses LMNT)

2–3 Tbsp cashew butter (softened in microwave for 15-30 sec)

1–2 Tbsp water, as needed
Matcha Mint Protein “Ice Cream” Filling
- 1 cup cottage cheese ice cream

¼ cup vanilla protein powder (Erica uses Be Well by Kelly)

2 Tbsp matcha-coconut blend (or matcha powder)

10-12 crumbled insides of Catalina Crunch Chocolate Mint sandwich cookies
Toppings & Garnishes

Crumbled B.T.R. Nation Cinnamon Cashew Crunch PROTEIN+ bar bits

Finely chopped sugar-free dark chocolate

Grain-free pretzel sticks, halved for “cauldron handles” (Erica uses Fit Joy)
🔮 INSTRUCTIONS
Step 1: Form the Cauldron Shells

In a food processor, pulse the Catalina Crunch cookie outsides + B.T.R. brownie bars into fine crumbs.

Add softened cashew butter and mix until a dough forms; add water gradually if needed to bind.

Scoop ~1 small cookie-scoop of crust mixture into each cavity of a 24-cup silicone mini muffin tin, pressing up the sides to form mini cauldrons.

Freeze for 10–15 minutes until firm. Pop them gently out if needed and keep frozen while preparing the filling.
Step 2: Make the Matcha Mint Filling

Prepare your “ice cream” base using a cottage-cheese ice cream or use Erica's cottage cheese ice cream recipe to make your own. Add vanilla protein powder, matcha powder, and insides of Catalina Crunch Chocolate Mint sandwich cookies and blend.

Scoop the mixture into each frozen shell, filling them nearly to the top.
Step 3: Top, Freeze, & Serve

Sprinkle each filled cauldron with crumbled B.T.R. bar bits and chopped dark chocolate.

Insert a halved pretzel stick as a “handle"

Freeze for 2–3 hours, or until firm.

Keep stored in the freezer until ready to enjoy!
